Preheat the oven to 180°C.
make the tomato sauce
- In a saucepan, heat olive oil over medium heat
- Add chopped onions and garlic, sauté until softened
- Pour in crushed tomatoes
- Add basil, oregano, salt, and pepper.
- Simmer for 20-30 minutes, allowing the flavours to infuse and develop while preparing the mince
prepare the mince
- Heat the olive oil in a large non-stick pan
- Once the heat has reached a medium to high heat, add the carrot and onion, stirring constantly until they are well sweated and glassy in appearance
- Add the Froom mince and garlic, stirring constantly until it becomes lightly browned with a uniform caramelisation (If the mince is cooking too quickly, turn down the heat on your stove)
- Add the thyme, oregano, salt, and pepper
- Add the tomato sauce and stir through thoroughly
- Let it simmer for all the flavours to infuse while you make the bechamel sauce
make the bechamel sauce
- In a saucepan, heat the oil over medium heat
- Whisk in cornstarch / kava flour and cook for 1-2 minutes
- Gradually add milk, whisking constantly until the mixture thickens
- Season with salt, pepper, and nutmeg
- Set aside ready to assemble
to Assemble the lasagne
- In a baking dish, spread a thin layer of bechamel sauce at the bottom of the dish
- Place a layer of ready to cook lasagne sheets on top followed by a thin layer of bechamel sauce
- Add 1/3 of the mince filling, followed by a layer of béchamel sauce
- Repeat the layers, until you have three generous layers, topped with a 4th layer of lasagne sheets
- Pour over the remaining bechamel sauce ensuring that the corners are generously covered
- Sprinkle with a hearty topping of grated parmesan cheese
- Cover the baking dish and bake for 25 minutes
- Remove the cover and bake for an additional 15 minutes or until the top is golden brown and bubbly
to serve
- Allow the lasagne to rest for 10 minutes before slicing.
- Garnish with fresh parsley and serve hot with crusty bread and a fresh green salad

- 600g Froom mince
- 2 cloves garlic, minced
- 1 onion, finely chopped
- 1 carrot, grated
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano

- 12 lasagne sheets
- 2 cups shredded mozzarella cheese
- Fresh herbs to garnish
Tomato Sauce
- 2 cans (28 oz each) crushed tomatoes
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Bechamel Sauce
- 50 ml extra virgin olive oil
- 50g cornstarch or kava flour
- 750ml almond milk
- 1 pinch ground nutmeg
