Make your Tzatziki
- Peel & grate your cucumber
- Add the cucumber to a sieve over a deep bowl
- Squeeze down gently on the cucumber until all the excess water is removed
- Transfer the squeezed cucumber to a serving bowl
- Add the yoghurt, lemon juice, grated garlic and stir together well
- Season with salt and pepper to taste
- Set aside for serving
Cook your Mushroom Balls
- Heat the oil in a large non-stick pan
- Once the heat has reached a medium to high heat, add the mushroom balls, stirring constantly for about 6-8 minutes until they are lightly browned all over with a uniform caramelisation
- Warm up the wraps
- Spread a generous layer of hummus on the base of each wrap
- Add 4 mushroom balls
- Add diced tomatoes, cucumber and sliced onion
- Drizzle with Tzatziki
- Garnish with the fresh parsley
- Roll up the wraps, securing the ends, and serve immediately for a mouthwatering and nutritious meal!

- 240g Mushroom Balls (16 balls)

1 medium Lebanese cucumber

Juice of 1/2 a lemon

1 cup plain Greek Yoghurt

Salt & Pepper to taste

1 Tub of your favourite shop bought hummus
- 1/2 small red onion sliced finely

1-2 large tomatoes diced
- 1-2 medium cucumbers diced

1/2 a cup Fresh chopped parsley for garnish
