Potato Rosti Brekkie Burger

Worthy of the most important meal of your day.
Step 1 – Make the Guacamole
- Combine all the guacamole ingredients into a small bowl and smash until mixed through
- Season with lemon juice, salt and pepper
Step 2 – Make the ROSTI
- Add all the rosti ingredients into a bowl and mix together lightly until the flour is absorbed and well distributed
- Form into flat loose patties
- Heat about 4 tablespoons of oil in a pan and fry for 6-8 minutes until browned on both sides and the potato is cooked through
- Set aside and keep warm
Step 3 – Cook the FROOM™ Mushroom Burger
- Smash the burgers slightly
- Cook in pan or on BBQ for 6 minutes until evenly browned on both sides and a slight crust is formed (Time may vary depending on appliances used)
Step 4 – Easy Assembly
It’s time to pull it all together
- Add a layer of rocket to your crunchy rosti
- Add the smashed FROOM burger
- Scoop liberal quantities of guacamole on top of the burger
- Drizzle with Sriracha mayonnaise

Rosti
- 2 medium size potatoes
- 4-5 spring onions, finely chopped
- 2 Tablespoons Butter bean liquid to bind (reserve butter beans for snacking later)
- 4 Tablespoons flour
- Salt & Pepper to taste
Guacamole
- 1 Small Avocado
- 1 Small Tomato diced
- Lemon juice, salt & pepper to taste
Garnish
- Rocket
- Sriracha Mayonnaise
